When Soho Diner was searching for an iconic pie company to offer this diner staple, our gaze turned to Delancey St on the Lower East Side. The famed Petee’s Pie Company was the name on everyone’s lips. They’re based on a simple concept: make the best pie money can buy using real ingredients. They make their pies using seasonal local produce and natural fair-trade sweeteners. Their crust is made with organic flour and grass-fed butter from New York State. In other words: they make damn fine pie for damn fine people.

 

Petra “Petee” Paredez grew up in a pie-baking family. Her parents own the acclaimed Mom’s Apple Pie Company in Leesburg, Virginia. She was raised in the bakery, pulling all-nighters before Thanksgiving, learning the tricks of the trade, and piloting new recipes using produce grown on the family farm. Nowadays, she can be found serving legendary desserts to finicky New Yorkers.
